This article describes how to disable the overhead light so the doors can be removed without draining the battery.
Fortunately, for us Jeep owners, Jeep had the foresight to realize that we would want to remove the doors. Disabling the overhead light and door buzzer is as simple as removing a single fuse.

Remove Glove Compartment
The fuse box is located behind the glove compartment, which is very easily removed.
First, remove the strap that secures the glovebox. No tools are needed, the strap just pulls out sideways.

Once the strap is removed the glovebox can be lifted out from its hinge.

Remove the Fuse
Behind the glovebox sits the fuse panel. There is a schematic below the box that describes the location of the Door Switch Defeat fuse. I've circled the appropriate fuse to remove on my Jeep. The fuse can be removed by hand or a pair of pliers by grasping and pulling straight out.

Now that the fuse has been removed, the overhead light won't come on when the doors are opened, and no more annoying buzzer. If you need the light turned on you can still twist the headlight switch.
